Five things that have never changed
There is no clever trick to Kerrygold, which is a slightly awkward thing to admit on a homepage. We take milk from Irish cows that spend most of the year outdoors eating grass, churn the cream into butter, salt it, and wrap it in gold foil. That has been the arrangement since 1961, and the arrangement is the product.
Everything below follows from the field: the colour, the taste, the way it behaves in your pastry and in your pan, and the 14,000 farming families who own the co-operative behind it.
Why it's golden

Our cows graze outdoors up to 300 days a year. That pasture is where the deep golden colour and the rich, creamy taste come from.

The gold foil and green sash have barely changed since the brand launched in Britain in 1962.
Wrapping butter in gold was the brave bit
In the early sixties, butter in Britain came in greaseproof paper and was priced as a commodity. Wrapping ours in gold foil was a deliberate signal that this was something you chose rather than something you defaulted to.
It also happened to be true. The butter genuinely was richer and more golden, because the cows genuinely were out on grass — and both of those things are still the case.
I've tested every block on the market and I keep coming back. It's the water content — there's simply less of it, so the laminating stays clean and the layers lift properly. In a busy bakery that reliability is worth more than anything else.
